Les exploitations du type "bovins-viande" dans les États membres de l'UE : une forte diversité de systèmes de production

Abstract

L'article propose une analyse de la diversité des exploitations européennes professionnelles du type "bovins-viande". En mobilisant les données du Réseau d'information comptable agricole (RICA), il cherche à mettre en évidence la forte hétérogénéité des exploitations selon 27 bassins de production, deux classes de spécialisation en production de viande bovine, quatre classes de taille de cheptel et quatre systèmes d'élevage (engraisseur, naisseur, naisseur-engraisseur et mixité bovins-viande, ovins-caprins). Les exploitations bovins-viande, qui ne représentent qu'une part somme toute modeste de l'offre européenne de viande bovine (elles détiennent 30% du cheptel total de bovins), jouent un rôle territorial essentiel dans plusieurs bassins de production où les possibilités de réorientations des systèmes productifs sont faibles (y compris dans le cadre de la mise en œuvre du découplage). Très dépendantes des aides directes et néanmoins avec des niveaux de revenu souvent modestes, surtout dans le cas des unités de petite taille, les exploitations du type "bovins-viande" apparaissent être particulièrement sensibles à toute évolution de la politique agricole commune (PAC) et en particulier, aujourd'hui, aux choix nationaux de mise en oeuvre de la réforme de juin 2003.
