Abstract

Dans un contexte agroalimentaire agité de crises économiques et sanitaires, les produits fermiers connaissent un engouement grandissant, issu simultanément d'une croissance de l'offre et de la demande. Le fait que le processus fermier repose en principe sur la maîtrise de la chaîne par l'agriculteur et sur un rapport direct au consommateur, aurait dû le préserver des dérives mercantiles que subit actuellement la bio. En fait, la satisfaction conjointe de l'intérêt du producteur et du consommateur n'est pas systématique. Faute d'un cadre législatif précis, les produits fermiers connaissent de nombreux dérapages, tant du fait des producteurs, de l'inadaptation du contexte agroalimentaire, que de l'inconséquence des consommateurs
