Inocuidad de la carne en los mercados de abasto: entradas para mejorar la gobernanza y vigilancia

Abstract

La carne que se vende en los mercados de abastos puede contener microorganismos patógenos que representan un riesgo para la salud de las personas. Este riesgo puede reducirse con mejores prácticas de higiene e inversiones en los mercados. La pandemia demostró que se pueden lograr mejoras, pero estas son costosas de implementar y mantener en el tiempo. Los consumidores mostraron una disposición a pagar un precio mayor por la carne vendida en puestos saludables. Sin embargo, para que la certificación de puestos sea creíble, se necesita una mayor vigilancia y capacitación por parte de los gobiernos y las autoridades locales, y un mayor involucramiento de las asociaciones de vendedores.
