Abstract

Le document présente les principaux indicateurs anthropométriques mesurant l’état nutritionnel des individus et des populations. Il donne des éléments pour juger de leur pertinence, pour comparer deux populations et pour évaluer les grandes tendances de l’état nutritionnel. Il traite des questions de malnutrition (déficit nutritionnel) dans le Tiers-Monde, et des questions de l’obésité (excédent nutritionnel) devenue un problème de santé publique mondial. Il est illustré par des exemples tirés des pays européens, nord-américains, et africains. Le document vise un public de non-spécialistes, et tout particulièrement les économistes, les démographes, les statisticiens et les chercheurs de sciences humaines intéressés par la mesure de l’état nutritionnel.
