Abstract

O presente estudo objetiva definir e analisar a cadeia produtiva da carne suína no estado do Rio Grande do Sul e na serra gaúcha, sob a ótica da teoria dos custos de transação, além ter como referência a suinocultura mundial e nacional. Emprega-se ainda o modelo estrutural de série de tempo para analisar os componentes principais, a tendência e sazonalidade, das séries preço do milho e preço do suíno recebido pelo produtor. Os resultados indicam que a cadeia é altamente estruturada e que os principais atores estão organizados numa linha de integração vertical. A produção nacional de carne de suíno está concentrada nos estados de Santa Catarina, Paraná, Rio Grande do Sul e Minas Gerais. A suinocultura gaúcha, que representa 13% do rebanho do país, é desenvolvida, sobretudo em pequenas propriedades, em conjunto com outras culturas como fruticultura e olericultura. A análise dos componentes principais permite concluir que tanto a tendência quanto a variabilidade sazonal são mais elevadas na série preço do suíno recebido pelo produtor gaúcho do que na série preço do milho. ----------------------------- This study aims to define and analyze the productive chain of the pig meat in the state of Rio Grande do Sul and the Sierra Gaucha region under the theory of the transaction costs. The international and domestic production of pork will be considered. Additionally, the structural model for time series is used to analyze the main components, as trend and seasonality of the series of the price of corn and the price of swine received by the producer. The main results point out that the productive chain of the meat of pig is well structured. The actors of the chain are organized in a line of vertical integration. The domestic production of pork is concentrated in the Brazilian states of Santa Catarina, Paraná, Rio Grande do Sul and Minas Gerais. The swine in Rio Grande do Sul represent 13% of the country’s total. They are created in small farms together with the production of other animals and crops like fruits and vegetables. The analysis of the main components indicated that both, the trend and the seasonal variability, are higher in relation to the price of swine received by the state’s producer than the price of corn series.
