Abstract
Desde a década de 70 a suinocultura vem evoluindo significativamente, tornando-se uma moderna cadeia produtiva. Atualmente os produtores criam o suíno moderno com 55% a 60% de carne magra na carcaça e apenas de 1,0 a 1,5 centímetro de espessura de toucinho. Essa evolução faz com que mundialmente seja a carne mais consumida. No Brasil, contudo, o consumo de carne suína seguiu tendência contrária, quando comparado ao resto do mundo. Esta inversão de valores pode ser explicada por hábitos e tradições regionais e questões de saúde, essas últimas repletas de mitos e informações distorcidas, que prejudicam a imagem da carne suína in natura. Sendo assim, o objetivo deste estudo foi avaliar o grau de informação dos consumidores, a respeito da carne suína in natura por meio de questionários ressaltando pontos relevantes como freqüência de consumo, conhecimentos sobre a produção e enfermidades relacionadas a ela. ----------------------------------------------Since the 1970 decade, the swine production has significantly evolved, becoming a modern productive chain. Currently, growers raise the modern swine with 55% to 60% of low fat in meat carcass and only 1.0 to 1.5 centimeters of back fat thickness. This evolution led the swine to be the most consumed meat worldwide. In Brazil, however, the swine meat has followed the opposite path, when compared to the rest of the world. This value inversion can be explained by habits and regional traditions, as well as health myths and misunderstood information, which impair the image of in natura swine meat. So, the aim of this study was to evaluate the degree of consumers information regarding the in natura swine meat, through questionnaires that highlighted relevant questions like consumption frequency, knowledge about production and diseases.
