Ansätze zur betriebswirtschaftlichen Analyse von Nebenströmen der Kartoffelverarbeitung aus der Ernährungswirtschaft

Abstract

In der Forschungsarbeit werden die Verwertungsoptionen von Nebenströmen aus der Kartoffelverarbeitung untersucht. Im Mittelpunkt der Betrachtungen steht die innovative Nutzung von Kartoffelnebenströmen als Substrat für die biotechnologische Produktion von Lebensmittelzusatzstoffen. Ziele der Forschung sind die Ermittlung der Substratkosten der Nebenströme und die Prozessanalyse der anschließenden biotechnologischen Verwertung. Ein wichtiger Meilenstein zur Erreichung der Ziele ist die Definition der Wertschöpfungskette von Kartoffelnebenströmen, ein weiterer die Abschätzung des Aufkommens und der Verwendung der Nebenströme. Die Untersuchungsregion ist Niedersachsen als bedeutende Wirtschaftsregion des Anbaus und der Verarbeitung von Kartoffeln.
