Unzureichender Verbraucherschutz Vor Dem Mykotoxin Deoxynivalnol – Aktuelle Situation Und Verbesserungsmöglichkeiten

Abstract

Mykotoxine [„Schimmelpilzgifte“] sind Stoffwechselprodukte bestimmter Pilze. Der Konsum Mykotoxin-belasteter Lebensmittel kann insbesondere für Risikogruppen unter den Verbrauchern ein Gesundheitsrisiko darstellen. Wichtige Mykotoxin-Bildner finden sich in der Pilzgattung Fusarium, als deren Leittoxin das Deoxynivalenol (DON) gilt. Besonders gravierend ist, dass sich das Vorkommen von Fusarium-Mykotoxinen allgemein sowie von DON speziell bisher nicht vollständig vermeiden lässt und – witterungsabhängig – insbesondere in sogenannten „Fusarium-Jahren“ ein nennenswerter Befall möglich ist. Hierdurch können bestimmte Verbrauchergruppen die unbedenkliche tolerierbare Tagesaufnahmerate erheblich überschreiten. Der erste Teil dieses Beitrags betrachtet den aktuellen Stand des Verbraucherschutzes vor DON. Dabei wird deutlich, dass eine Inkompatibilität zwischen den zulässigen Höchstgehalten und der gesundheitlich unbedenklichen Aufnahmerate besteht. Im zweiten Teil betrachten wir, wie man das aus dieser Inkompatibilität resultierende Gesundheitsrisiko verringern kann, wobei wir uns auf die Ergebnisse einer Expertenbefragung stützen.
