Rôle des marchés du bétail, dans les filières viandes bovine et ovine d’une région semi-aride algérienne

Abstract

Les filières viandes rouges en Algérie reposent globalement sur des élevages bovins et ovins, elles sont articulés à un marché interne fort rémunérateur, du fait du maintien de la demande à un niveau relativement élevé et de la faible élasticité de l’offre interne. Les structures de prix sont dominées par les marges prélevées par les réseaux privés de commercialisation. L'objectif de cet article est d'étudier le marché des viandes bovine et ovine, qui est mis en oeuvre essentiellement par des opérateurs. Le système de commercialisation de produits d’élevage et d’aliments de bétail est caractérisé par l’existence d’agents économiques qui sont éleveurs, maquignons et bouchers; ces opérateurs sont en contact permanent entre eux. L'information sur les prix et les quantités est parfaitement accessible à tous moment et à tous les opérateurs. Aucun opérateur par ces décisions ne peut seul faire évoluer le marché de façon significative, libre entrée, transparence, homogénéité du produit, atomicité de l'offre et de la demande.
