La copetitividad de un Sistema Agroalimentario Localizado productor de quesos en el Altiplano Central de México

Abstract

Se determinó la competitividad del Sistema Agroalimentario Localizado (SIAL) quesero de Aculco, México. Se definió la competitividad como la capacidad de mantener y ampliar su participación en mercados y generar valor. Se utilizó el Diamante de Porter modificado con un análisis económico; en cada arista se obtuvieron indicadores para determinar la competitividad. Existen condiciones para producir leche, además ventajas para elaborar quesos tradicionales. La comercialización fue a precios similares a los nacionales. Por otro lado se presentaron factores negativos como falta de industrias de apoyo, nula integración vertical y mala integración horizontal, además de competencia con productos análogos baratos y la mala calidad sanitaria del queso. El análisis económico indicó que todos los actores obtuvieron utilidades, aunque las queserías fueron las que generaron mayor valor. El SIAL quesero comercializó el producto y generó valor aunque no se distribuyó equitativamente entre los actores por lo que se considera competitivo aunque inequitativo
