Abstract

Zusammenfassung Das Congress-Catering hat in der Kongress- und Tagungswirtschaft an Bedeutung gewonnen und ist so stärker in den Vordergrund bei der Planung von Events sowie Kongressen und Tagungen gerückt. Die Planung und Umsetzung einer Nachhaltigkeitsstrategie für Buffet und Catering verlangt eine systematische Nachhaltigkeitsstrategie. Auf Basis des Veranstaltungsleitfadens des Umweltbundesamtes hat das Hotel Dorint am Standort Mannheim ein Konzept für ein nachhaltiges Congress-Catering entwickelt. Daraus ergeben sich Chancen, aber auch Herausforderungen bei der Preisgestaltung, der Beschaffung oder der Kommunikation.
