Abstract

Welcome to the oasis Agroittica Lombarda. Here time stands still, and it is quite magic, a magic that made it possible for the king of fish to survive, the sturgeon. Throughout history, man has considered the sturgeon a fish of great value both for its exquisite flesh and for its delicious eggs from which, applying a simple salting procedure, the legendary caviar is obtained. One of the largest sturgeon farms in the world, leader in the production of caviar, is an Italian company, Agroittica Lombarda, which focuses on sustainability, as well as quality, authenticity and technology. In the 1970s, starting from a brilliant intuition, a group of entrepreneurs led to the creation, in the following decades, of an exemplary system of modern aquaculture covering 60 hectares, a model of avant-garde ecology, which achieved worldwide recognition.
