Cadmio en el cacao de América Latina y el Caribe. Análisis de la investigación y soluciones potenciales para la mitigación

Abstract

El cadmio es un metal pesado de origen natural, que no tiene una función conocida en los seres humanos. Se acumula en el cuerpo y afecta principalmente a los riñones, pero también puede causar desmineralización ósea. Estamos cada vez más expuestos al cadmio en nuestra dieta. En respuesta a esto, la Unión Europea (UE) está estableciendo niveles máximos permisibles de cadmio en diferentes alimentos. En 2014, se establecieron los niveles máximos permitidos para el cadmio en los productos de cacao y chocolate vendidos en la UE. Esta medida ha traído preocupación a las naciones productoras de cacao en América Latina, pues la exportación a países de la UE representa gran parte del destino del cacao cultivado en América. El presenta trabajo estudia las diferentes maneras de medir la presencia de cadmio en el cacao, así como medidas para mitigar y reducir el impacto de este metal en la producción agrícola de la región.
