An approximation to the history of Andean gastronomy

Abstract

En este artículo se explica la evolución de las investigaciones del autor en el área de la historia de la alimentación particularmente andina, iniciadas en la década de 1980 y dentro de la temática de la historia de las mentalidades. Allí se revisan críticamente los primeros ensayos relacionados con el tema (La Mesa de la Meseta, 1988; Mesa y Cocina en Mérida, 1992; los tránsitos del Agua, 1993), que lo condujeron, gradualmente y a veces sin un propósito claramente consciente, a la elaboración de un ensayo sobre la geohistoria y economía de la alimentación andina, en la que se analizan los conceptos de región y región alimentaria, e intenta su caracterización utilizando una serie de descriptores que están relacionados con el desarrollo de los regímenes alimentarios regionales.
