Abstract

В статье даны определения шоколаду и его разновидностям. Представлен сравнительный анализ ассортимента, требований к качеству и хранению шоколада на основе утратившего силу и действующего стандартов ГОСТ 6534-89 и ГОСТ 31721-2012, соответственно. В настоящее время определяющими позициями следует считать увеличение разновидностей шоколада с учетом различия массовой доли какаопродуктов, ограниченное включение в рецептуры эквивалентов и улучшителей какао масла, расширение диапазона рекомендуемого температурного режима хранения шоколада.
