Abstract

Статья посвящена разработки плана ХАССП при производстве мясного хлеба. Раскрывается сущность и преимущества использования системы менеджмента качества на основе принципах ХАССП, дается подробное описание продукта и технологической блок-схемы производства. Автором также проведен детальный анализ опасностей при производстве мясного хлеба с использованием белкового полуфабриката и определены критические контрольные точки при его производстве.
