Влияние Растительных Масел На Качество Песочного Полуфабриката

Abstract

Статья посвящена проблеме повышения пищевой ценности мучных кондитерских изделий, в частности песочного полуфабриката. Рассмотрены причины, приведшие к необходимости создания мучных кондитерских изделий с повышенной пищевой ценностью, проанализирован химический состав масел растительных источника ненасыщенных жирных кислот и ряда витаминов. Приведены и проанализированы органолептические, физико-химические показатели песочных полуфабрикатов, приготовленных с частичной заменой масла сливочного на масло растительное. Доказана экономическая эффективность замены части масла сливочного, идущего по рецептуре смесью растительных масел.
