Abstract

Статья содержит сравнительный анализ работы предприятий общественного питания советского периода и настоящего времени. Приведены статистические официальные и альтернативные оценки финансовых результатов отрасли для 2001 г., а также ее динамика за 2000-2005 гг. Скорректирован размер валовой добавленной стоимости сферы общественного питания на основе выявленного недоучета оборота. Показан размер теневых доходов отрасли, обоснована необходимость увеличения налоговых выплат и показан их возможный размер.
