Abstract

В статье обосновывается перспектива использования полисахаридов морского генеза в составе ферментированного напитка на основе молочной сыворотки на примере экспериментальной модели. Затронуты вопросы качества и безопасности, рассмотрена сравнительная динамика изменений микробиологических показателей при хранении напитка с полисахаридом и без. Доказана стабилизирующая роль полисахарида морского генеза при хранении напитка на основе молочной сыворотки.
