Abstract

Представлены рецептура и технологическая схема новых напитков винных типа портвейна с общим названием «Букет Приморья», их физико-химические и органолептические характеристики, показатели безопасности. Сделаны выводы о возможности получения качественных напитков винных типа портвейна из дальневосточного растительного сырья. Показана экономическая целесообразность производства новых продуктов.
