Abstract

Изучено обогащение соевого молока изофлавонами с целью повышения его полезности как диетического продукта. Показано, что термоустойчивый фермент мальтозилтрансфераза из бактерий осуществляет трансфер (остаток мальтозила) из мальтотриозы в гликозиды изофлавона сои in vivo
