Abstract

Рассмотрены различные виды гидролиза белкового сырья. Разработана технология производства мясного хлеба с добавлением коллагенового гидролизата. Показано, что полученный мясной хлеб содержит меньше жира и больше белка по сравнению с мясным хлебом, выработанным по традиционной технологии, и обладает высокими органолептическими показателями
