Микробиологические Риски Сырья И Продукции Из Дальневосточных Лососевых Рыб

Abstract

Рассмотрен один из аспектов обеспечения качества и безопасности продуктов питания (микробиологический) на примере дальневосточных лососей. Приведены уровни микробной контаминации воды и рыбы, выловленной в местах их промысла. Выявлено превышение нормативного уровня микроорганизмов в рыбе, выловленной в устьях рек. Оценены микробиологические риски (МР), связанные с употреблением дальневосточных лососей в пищу. Показано, что МР представляют значительную опасность для здоровья и безопасности населения РФ.
