Оценка Качества Рыбных Пресервов С Добавлением Пряно-Масляных Экстрактов

Abstract

Предложено реализовать антисептические свойства пряностей в пищевых технологиях. Действие пряно-масляных экстрактов изучалось классическими методами и параллельно методом биотестирования с использованием Tetrahymena pyriformis. Показано, что замена растительного масла на пряно-масляные экстракты приводит к ингибированию развития микроорганизмов в процессе хранения готовой продукции, что достоверно улучшает показатели качества и безопасности продукции, не изменяя ее биодоступность
