Abstract

[eng] The analysis of food consumption by economists remains limited. . An interdisciplinary approach would certainly be more appropriate to understand food consuming habits. . A study in progress on wine consumption although it has been carried out by economists alone, has tried to bring out the various elements of this consumption, which seems declining on the whole. . Its structure in terms of space, time, family group, circumstances, has enabled to oppose a « functional- profile» (daily consumption with meals, to quench thirst) and a « pleasure-profile » (occasional consumption, with a convivial character). . Thus, the dynamics of consumption in France seems on the whole to build up through the relative evolution of consumer groups in regard to these two profiles. [fre] L'analyse de la consommation alimentaire par les économistes reste limitée. Un approche interdisciplinaire serait certainement bien appropriée pour comprendre les comportements alimentaires. . Une étude en cours sur la consommation du vin, bien qu'elle soit le seul fait d'économistes, a tenté de mettre en évidence les divers facteurs de cette consommation, qui apparaît globalement en régression. . Sa structuration en fonction de l'espace, du temps, du groupe d'appartenance (ménage), des circonstances, a permis d'opposer un profil fonctionnel (consommation quotidienne à table, pour se désaltérer) et un profil agrément (consommation de circonstance, à caractère convivial). . C'est par l'évolution relative des groupes de consommateurs au regard de ces deux profils que semble s'organiser globalement la dynamique de la consommation en France.
