[fre] Composé pour les deux tiers de femelles laitières, le troupeau bovin n'a cessé de 1963 à 1969 de s'orienter vers un type de production où la viande n'est qu'un sous-produit ou un à côté de la production de lait commercialisé. Le développement de ce type de production, qui se manifeste en particulier par une croissance des races laitières dans des grandes étables et par un développement de ces étables, n'est freinée que par une tendance marquée des exploitations de plus de 20 ha à abandonner l'élevage pour se consacrer à d'autres spéculations. Seules, peut-être, les exploitations de plus de 50 ha localisées dans le centre de la France ont quelque peu tendance à développer une production de viande indépendante de celle du lait.
