Les crises économiques à l’épreuve de l’histoire anthropométrique : l’exemple de Strasbourg au XIXe siècle

Abstract

Les sources de la conscription française livrent des données sur la taille, les pathologies révélatrices de malnutrition et, en l’absence de recensement fiable jusqu’au milieu du XIX e siècle, la profession et le lieu de naissance, dont l’étude débouche également sur une mise en lumière des mouvements migratoires. L’impact des crises économiques est perceptible dans la physiologie des conscrits, affinant et corrigeant notre vision des événements. Ainsi, un bon nombre de catégories professionnelles présente avant la Révolution des signes de malnutrition inférieurs aux époques postérieures, ce qui relativise considérablement la crise agricole de 1788 et donc sa portée dans le déclenchement des événements de 1789. De même, il convient de nuancer les conditions de vie des ouvriers urbains au XIX e siècle.
