Abstract

Las empresas rurales de la región del Totonocapan del estado de Veracruz, al igual que el resto de la república mexicana requieren modificar su estructura productiva y adaptarse a las condiciones cambiantes que la modernidad y la competitividad derivada de las relaciones globales exige. En esta propuesta investigativa se aplica el modelo de cambio organizacional para la creación de pequeñas y medianas empresas de productos no tradicionales diseñado y aplicado a un grupo de empresas familiares rurales de la región de Coatepec Veracruz , donde se logro transitar de una organización tradicional campesina hacia una PYME moderna capaz de apropiarse de los beneficios de la comercialización y del valor agregado sustentado este proceso en la sinergia producida de combinar la cultura organizacional, la gestión del conocimiento, la adopción de la cultura de la calidad y la conservación de los recursos naturales. El producto no tradicional elegido fue la miel de abejas europeas muy conocidas en los mercados internacionales y donde México destaca como país exportador de este producto.
