Diagnóstico situacional de la cadena agroalimentaria de producción lechera para el sector informal urbano de la provincia de Chimborazo Cantones Riobamba - Chambo

Abstract

El objetivo principal de esta investigación es el análisis de la cadena agro productiva de lácteos en la zona de Riobamba y Chambo. Para ello se entrevistaron diferentes actores de la cadena: proveedores de insumos, productores lecheros, responsables de centros de acopio, industrias y consumidores. Se estableció el modelo de la cadena de producción definiendo e identificando factores críticos por cada eslabón y el impacto transversal de asistencia técnica, tecnología agropecuaria, financiamiento, integración, calidad, dominio de tecnología y alta competencia con marcas líderes. Se realizó también un análisis descriptivo de datos correspondientes al Censo Poblacional, Agrario y Encuesta Anual de Producción Agropecuaria en la última década. La debilidad de los pequeños productores es su bajo poder de negociación como resultado de la falta de asociatividad, estructuras de costos por encima del precio establecido y una dependencia sustancial del mercado y bajo valor agregado de sus productos.
