Evaluación del tiempo de vida útil de la conserva de cidra a base de panela

Abstract

Citrus medica, comúnmente llamado cidro o citrón, es un arbusto de la familia de las rutáceas cultivado por su fruta, llamada cidra, ​ limón poncil, limón francés o toronja, que rara vez se consume fresca, pero cuya piel se usa en preparaciones de repostería y como aromatizante por su fuerte contenido en aceites esenciales. En este trabajo se elaboró una conserva de cidra a base de panela en diferentes concentraciones de pulpa de la fruta al 30 - 35% y 70 - 65 % de panela como conservante; se estimó la vida útil a 1, 15 y 30 días almacenado en envase de cristal a temperatura ambiente (15° C y humedad relativa (HR) entre 70 y 82%); para realizar el análisis microbiológico del producto se determinó levaduras y hongos, microorganismos, Staphylococcus aureus, en el análisis físico se determinó color, aspecto y olor.
