Mansoa alliacea (ajo sacha): posibilidad de difusión en la gastronomía ecuatoriana

Abstract

En este artículo se enuncia el uso y aporte gastronómico del ajo sacha (Mansoa Alliacea) planta ancestral utilizada por los habitantes de la zona amazónica del Ecuador; utilizada comúnmente con fines medicinales y gastronómicos. La idea de esta contribución es la de otorgar a la sociedad conocimiento e impulsar los cultivos e ingredientes autóctonos y ancestrales de la zona incentivando su introducción, difusión, rescate y usos en la gastronomía del país; acercándonos y fortaleciendo cada vez más a nuestra identidad y cultura. Para esta publicación se ha compilado información bibliográfica pertinente; además de registrar información de campo mediante entrevistas y visitas a los lugares de cultivo para explorar de manera más eficaz la importancia, potencialidad y representatividad que tiene esta planta en nuestro patrimonio cultural.
