Leche fermentada probiótica bovina y caprina: estudio preliminar de obtención

Abstract

El consumo de leches fermentadas con valor probiótico es una tendencia creciente a nivel mundial. La leche de vaca es la de mayor difusión, pero en los últimos años se ha despertado interés por el empleo de otras leches principalmente por motivos económicos, de salud o disponibilidad. Dentro de esta tendencia, la leche de cabra representa una alternativa importante ya que posee mayor contenido de proteínas y grasas y menor contenido de lactosa que la leche de vaca. El objetivo de este trabajo fue realizar una evaluación preliminar de la posibilidad de desarrollar leches fermentadas de vaca o cabra con características probióticas y buena aceptación por parte de los consumidores. En base a los resultados obtenidos en este estudio se concluye que es factible obtener leche fermentada con características probióticas a partir de leche de vaca o cabra pero en el caso de esta última, es necesario mejorar su sabor mediante el uso de saborizantes.
