El arte culinario de Ciego de à vila: influencia de lo foráneo y lo popular

Abstract

Se realizó una monografía etnográfica sobre los principales hechos de carácter sociocultural que incidieron en el origen de la cocina avileña actual, con el objetivo de profundizar en la génesis de la cultura alimentaria y culinaria; así como divulgar algunos platos autóctonos e inéditos de la región. Para la realización de este estudio se aplicaron los métodos de investigación histórico-lógico y analítico-sintético; y las técnicas de diagnóstico empleadas se basaron, fundamentalmente, en entrevistas a especialistas claves en la temática y a representantes de las principales etnias residentes en el territorio; así como en la recopilación y procesamiento de datos y el ordenamiento de dicha información. Se concluye que el arte culinario avileño surge y se desarrolla sobre la base de variadas culturas, y de ellas sobresalen las raíces: indígena, española, africana, china, francesa y criolla; y que posee platos autóctonos, algunos de ellos inéditos y/o anónimos, de indiscutible valor cultural y nutricional que pudieran ocupar un lugar relevante en el menú turístico de la región.
