Abstract

El sector de cárnicos y embutidos en el Ecuador es uno de los más representativos a nivel económico para el país. Los cárnicos son considerados productos de consumo masivo y son alimentos con alto grado de demanda, que siempre deben ser conservados de la mejor manera para llegar en óptimas condiciones al consumidor final. La venta de este tipo de mercadería debe ser bien planificada para evitar pérdidas significativas y contribuir a que la empresa comercializadora genere los máximos beneficios posibles.
