Factores críticos en la administración de Trapiches, de la región de Huatusco, Veracruz

Abstract

En México la producción de piloncillo participa con el 2.3% de la producción nacional de endulzantes provenientes de la caña de azúcar, con un promedio de 115 mil toneladas. Entre las principales regiones del estado de Veracruz productoras de piloncillo se encuentra el municipio de Huatusco con una superficie sembrada de caña de azúcar de 1050 (has) y una producción de 73500 ton (idem, 2012), industria que en contraste a la industria azucarera, se realiza en pequeñas explotaciones campesinas mediante procesos artesanales en los que prevalece una alta intensidad de trabajo familiar y tecnologías artesanales (Rodríguez, 2001).
