Abstract

Introducción. El maíz es quizá el bien más importante de México. En las áreas rurales es el alimento principal de los agricultores y a veces se usa como insumo intermedio para alimentación de los animales; en la áreas urbanas es el insumo principal de las tortillas y la harina de maíz, componentes baásicos de la alimentación de los trabajadores urbanos. Pero la importancia del maíz va más allá de su carácter de bien de consumo principal. Este cultivo ocupa entre un tercio y la mitad de la tierrra cultivable del país y emplea a uno de cade tres trabajadores rurales. El maíz es cultivado tanto por gran número de pequeños productores en tierras de temporal como por un número relativamente pequeño de grandes agricultores en tierra de riego...
