Abstract
Olive‐growing territories are undergoing a strong challenge within globalization. New methods of planting worldwide are reducing costs and improving harvesting processes. In turn, the international value chain of olive oil is being increasingly managed in a professional way, giving rise to new and better olive oils that are opening new niches in new and old markets. Will traditional olive oil Mediterranean regions be able to adapt their model of production in order to face a new situation in the market? The answer is conditioned by the struggle between the knowledge of the sector and the regional traditions. Los territorios olivareros se enfrentan a un fuerte desafío en el marco de la globalización. Los nuevos métodos de plantación en todo el mundo están reduciendo los costos y mejorando los procesos de cosecha. A su vez, la cadena de valor internacional del aceite de oliva se está gestionando cada vez de forma más profesional, dando lugar a nuevos y mejores aceites de oliva que están abriendo nuevos nichos en nuevos y antiguos mercados. ¿Podrán las regiones mediterráneas tradicionales del aceite de oliva adaptar su modelo de producción para hacer frente a la nueva situación en el mercado? La respuesta está condicionada por la lucha entre el conocimiento del sector y las tradiciones regionales. オリーブ栽培地域は、グローバリゼーションの大きな課題に直面している。世界中で行われている新しい栽培方法では、コストが削減され収穫のプロセスが改善されている。その反面、オリーブオイルの国際的なバリュー・チェーンは、よりプロフェッショナルな経営を行い、より良いオリーブオイルの新製品を作り、新たなマーケットと従来のマーケットに新たな分野を切り拓いている。地中海のオリーブオイルを伝統的な方法で生産する地域がマーケットの新しい状況に対応するためにその製造方法の定型を見直せることができるか否かは、オリーブオイル産業セクターの知識と地域の伝統のせめぎ合いによって左右される。
