Abstract

Among other producers and (re)sellers of snacks and fast-food, bakeries and pastry shops are some of the most dynamic enterprises that have developed both at national level and at the level of Cluj-Napoca during the recent years. Given the great variety of such snacks, the authors aim at sketching the profile of the pastry consumer on the market of Cluj-Napoca. The results of two quantitative studies conducted online and face-to-face in 2013 and 2014 are analyzed. These results are considered to be relevant for the characterization of the local consumer. Another aspect that is covered by the present paper is that one concerning the supply side.
