Abstract
In recent years GM food has generated a considerable discussion with totally opposed opinions. In spite of being widely accepted by producers, the consumers, particularly in Europe. have been traditionally wary of this type of products. Once the new regulation on food labelling has been passed, consumers will have a certain amount of information on the nature of the products they are about to buy and, therefore, it would seem appropriate to measure the level of consumer acceptance of GM food products. The objective of this paper is to valuate the level of knowledge and attitudes consumers have about this type of products as well as their main determinants. Data come from a national survey specifically designed for this purpose. Results show that the level of knowledge, Spanish consumers have about GM food, is much lower than in other European countries or the United States. The traditional socio-economic variables of segmentation no longer play a relevant role in explaining consumer behavior, while individual values and lifestyles better help us to understand such behavior. Consumers with a higher level of education, paying more attention to labelling information and being more concerned with food safety issues have, in general, a more positive attitude towards GM food.
