Abstract
Los productos tipicos se consideran tanto un recurso como una esperanza para todo la colectividad europea. un recurso porque representan una parte importante del patrimonio productivo y cultural de muchas regiones rurales europeas, y una esperanza porque constituyen, precisamente por su capacidad para satisfacer a multiples tipos de consumidores, una palanca economica en la que basar politicas de desarrollo a escala local y, sobre todo, a escala de regiones rurales. Por consiguiente, este trabajo tiene dos objectivos. El primero es ilustrar las principales caracteristicas economicas de los productos tipicos y, por tanto, las posibles estrategias que pueden adoptar consumidores y productores, respectivamente, ante la posibilidad de utilizar y producir un bien de elevada calidad intrinseca, maximizando, asi, su nivel de utilidad. El segundo objectivo consiste en ilustrar por que los productos tipicos requieren una accion de gobernanze fuerte que permita la aplicacion de politicas de desarrollo local con el objectivo de redistribuir el beneficio resultante de la produccion y la comercializacion de estos productos. Todo lo expuesto de forma teorica se ejemplifica mediante el analisis de un estudio de caso representado por el Culatello di Zibello DOP (pernil de cerdo curado). Este producto representa, en positivo y en negatico, un ejemplo significativo de como un grupo de productores locales trataron de revalorizar su producto y el territorio de origen del mismo adoptando politicas de proteccion de la calidad y chocando con otras tipolodias de actores, que, a pesar de pertenecer al sector, prefieren politicas de sector a politicas de revalorizacion territorial...Typical products are at one time considered a resource and a hope for the whole European Community. A resource, since they represent an important part of the productive and cultural heritage of many European rural areas and an opportunity- thanks to their potential in satisfying multiple typologies of consumers- since they are considered an economic lever which local and regional (especially for the rural regions) development policies must be founded on. The aim of this work is twofold. First of all, it aims at illustrating the main economic features characterizing the typical products and the potential strategies which consumers and producers can respectively implement, when facing the option of using and producing goods with high intrinsic quality, thus maximizing their own level of usefulness. The second goal moves directly from these strategies and aims at explaining why the local development policies endeavour to distribute the income yielded by the production of the typical products, through collective behaviours which emerge as governance actions.
