Transformaciones del consumo alimentario ya su repercusion en el sistema agroalimentario

Abstract

Este trabajo explora las transformaciones contemporaneas del consumo alimentario en los paises desarrollados y su repercusion en el sistema agroalimentario, con particular mencion al caso espanol. Tras un breve examen de la evolucion reciente del consumo alimentario en terminos de magnitdues cuantitatives y de tendencias cualitatives emergentes, la parte principal del trabajo se centre, primeramente, en analizer los cambios en el comportamiento del consumidor que han estado tras dicha evolucion, destacando de modo especial los fenomenos de cambio estructural en los modelos de demanda convencionales, los enforques technicos de abordarlos, asi como la consiguiente necesidad de nuevos paradigmas analiticos. Subsiguientemente, se exploran una serie de implicaciones de las nuevas pautas de consumo en la reorgenacion del sistema agroalimentario, con particular enfasis en las reorientaciones estrategicas y organizativas de las distintas fases del mismo... This paper explores contemporary changes in food consumption in advanced societies as well as their implications for the agri-food system, with special reference to the Spanish case. After a brief discussion of the recent evolution of food consumption in terms of quantitative magnitudes and emergent qualitative trends, the central part of the work focuses, firstly, on analysing the changes in consumer behaviour behind that evolution, putting special emphasis on structural change issues arisen in empirical demand studies, the technical approaches to investigate them, as well as the correlate need for new analytical paradigms. Secondly, we explore some implications of the new consumption patterns in redesigning the agri-food system, stressing on the strategic and organisational reorientations of its different stages.
