De leche a carne: hacia el abandono de la actividad ganadera

Abstract

En este artículo describimos la dimensión que está alcanzando la transformación que el sector vacuno está sufriendo en el caserío vasco, centrando nuestra investigación en la comarca de San Sebastián. Observamos que en el proceso de consecución de unidades productivas competitivas la capacidad productiva se concentra en un reducido número de explotaciones, mientras el resto reestructura su orientación productiva pasando de vacuno de leche a carne. Sin embargo, este paso supone algo más que una simple reorientación de la actividad puesto que la explotación especializada en vacuno de carne tiende a abandonar la actividad agraria.........In this paper we describe the dimension of the structuration process of the cow sector in Basque Country, studying the area of San Sebastian. We see that in the process of consecution competitive farm units, the production capacity concentrates in a little number of dairies. The farmer who leaves the milk production doesn’t leave the cow sector, he begins with meat cow. However, this pass isn’t only a productions reorientation. The «new» farm begins the process to leave the farm activity.
