Porównanie jak ości mikrobiologicznej produktów mlecznych pochodzących z produkcji ekologicznej i konwencjonalnej

Abstract

Celem badań było porównanie jakości mikrobiologicznej mlecznych produktów wytwarzanych przez producentów ze składników pochodzących z rolnictwa ekologicznego oraz konwencjonalnego. Materiał badany stanowiły mleko i produkty pochodzenia mlecznego (jogurt naturalny, śmietana, sery twarogowe, sery dojrzewające podpuszczkowe). W produktach poddanych analizie oznaczano liczbę: Enterococcus sp., Staphylococcus aureus, drożdży i grzybów strzępkowych, pałeczek Escherichia coli oraz obecność pałeczek Salmonella spp. W żadnej badanej próbie nie stwierdzono obecności pałeczek Salmonella spp. Escherichia coli wystąpiły w 2 próbkach sera twarogowego pochodzącego z produkcji ekologicznej. Produkty pochodzące z produkcji ekologicznej i konwencjonalnej nie różniły się pod względem przeciętnej liczby mikroorganizmów w zależności od typu produktu mleczarskiego, z wyjątkiem serów podpuszczkowych dojrzewających, dla których wykazano istotną różnicę w liczbie Staphylococcus aureus.
