Wybory strategiczne przedsiębiorstw branży piekarniczo-cukierniczej

Abstract

Celem artykułu jest analiza czynników determinujących wybory strategiczne wśród przedsiębiorstw branży piekarniczo-cukierniczej w okresie od 2012 roku do trzeciego kwartału 2017 roku. Przedmiotem badań były przedsiębiorstwa analizowanej branży. Jako metodę badawczą wykorzystano klasyczną statystykę opisową bazującą na danych statystycznych PONT Info Ltd oraz raportach branżowych. Jako technikę badawczą wykorzystano desk research oraz obserwację wykorzystując analizę wskaźników struktury i wskaźników natężenia. Wśród największych barier rozwoju rynku piekarniczo-cukierniczego wymieniono utrzymujący się w ostatnich latach spadek spożycia pieczywa, jak i brak współpracy wewnątrz branży pomiędzy dużymi przedsiębiorstwami a małymi. Szansą dla rozwoju analizowanej branży jest rosnący eksport, oparcie strategii na specjalizacji polegającej na tworzeniu produktu niepowtarzalnego, jak również połączenie rzemiosła z nowoczesnymi technologiami i innowacjami – co jest najtrudniejsze.
