Estratégias De Inovação Das Mpes Peruanas De Alimentos

Abstract

Frente ao fenômeno da globalização, o desemprego e à crise econômica, a população peruana foi obrigada a procurar novas soluções para subsistir e melhorar sua qualidade de vida. Nessa problemática as micro e pequenas empresas (MPEs) representam uma oportunidade, mas, para criar valor agregado é necessário fomentar o processo de inovação. Algumas MPEs, principalmente, as do setor agroalimentar que empregam estratégias de inovação, ultimamente, baseadas no desenvolvimento de novos alimentos de tipo funcional, ou seja, com propriedades funcionais que beneficiam a saúde dos consumidores. O objetivo da presente pesquisa é de analisar os fatores que influenciam as estratégias de inovação nas microempresas peruanas através do desenvolvimento de produtos alimentícios com propriedades funcionais. Trata-se de uma pesquisa de natureza exploratória, do tipo estudo de caso e foram analisadas três organizações alimentares peruanas denominadas - Delicias, Galletera e Silvia, localizadas na cidade de Arequipa. Concluiu-se que a incorporação de matérias-primas locais, autóctones (cañihua, quinua, kiwicha, maca, habas, maiz morado, mamão arequipenho e sauco), com características funcionais e de qualidade adicionou maior valor agregado aos produtos finais. As organizações apresentaram inovações incrementais de produto, processo, distribuição e gestão ao longo da rede de valor da empresa focal. As MPEs peruanas cresceram e se tornaram competitivas através do desenvolvimento de estratégias de inovação acarretando em ganhos econômicos e sociais aos empreendedores locais e ao país. ----- Faced with the globalization phenomenon, unemployment and economic crisis, the Peruvian population was obliged to seek new solutions to survive and improve their life quality. In this case the Micro and Small Enterprises (MSEs) were a great opportunity to solve this problem adding value to foster the innovation process. Some MSEs, specifically from the agri-food sector employ innovation strategies based on the development of new functional food that benefits the health of consumers. This study aimed to analyze the factors which influence the innovation strategies in the Peruvian micro enterprises through the food products development with functional properties. This research that is an exploratory case study, analyzed three Peruvian organizations: Delicias, Galletera and Silvia in the city of Arequipa in Peru. It was concluded that incorporation of local raw native materials, (cañihua, quinua, kiwicha, maca, habas, maiz morado, mamão arequipenho and sauco), with functional characteristics and quality, added greater value to final products. The organizations showed incremental innovations of product, process, distribution and management along the value chain of the focal firm. Peruvian MSEs grew up to become competitive through the development of innovation strategies resulting in economic and social gains to the local entrepreneurs and the country.
