Les consommateurs face à l’évolution des Appellations d’Origine Contrôlée

Abstract

Nous présentons un protocole original d’économie expérimentale visant à mesurer ex ante l’impact d’une modification des Appellations d’Origine Contrôlée (AOC) au sein de l’aire géographique Marsannay (Bourgogne). Différents scénarios d’évolution des AOC, matérialisés par différents regroupements de bouteilles de vins, sont proposés aux participants afin de révéler leurs consentements à payer (CAP). Les groupes de bouteilles proposés offrent, dans des proportions variables, des niveaux d’AOC déjà présents sur l’aire géographique (les niveaux Village et Régional) et un niveau supérieur qui n’existe pas encore (le niveau Premier Cru). Les résultats de l’expérience permettent de hiérarchiser les évolutions potentielles selon les CAP moyens pour chaque AOC. Ce protocole pourrait être utilisé plus systématiquement pour instruire les futures demandes d’évolution pour d’autres AOC.
