Abstract
A fehér kenyér termelői illetve fogyasztói ára 1999-2003 közti időszakban jelentősen emelkedett. 2004-ben ismét jelentős, mintegy 20-25 Ft/kg-os növekedés várható. A búza áremelkedése miatt hasonló tendencia figyelhető meg a lisztőrlésben is. A búzatermelésben az egy hektárra jutó költségek emelkedése mellett az önköltség 2001-ben csökkent, ez az előző két évhez képest magasabb termésátlaggal magyarázható. 2002-ben és 2003-ban a termésátlag mérséklődése miatt a költség tovább nőtt. A 2003-as év terméscsökkenése, valamint annak a búza-liszt-kenyér vertikum vállalati végtermékeinek árára gyakorolt hatása újra felszínre hozta az ágazat költség és jövedelem helyzetében lévő aránytalanságokat, amit az általános forgalmi adó 2004-es emelkedése csak fokoz. Legjobb helyzetben a kereskedelem volt, legrosszabban a jelentős kapacitásfeleslegekkel üzemelő malomipar, bár a mellékterméknek nagy szerepe van a költségek csökkentésében, illetve a szerény eredmény elérésében. A vizsgált adatbázis sütőipari vállalatai, mint a költségek jelentős viselői, jövedelmi helyzetüket folyamatosan tartották, 2001-ben növelték azt. ----------------- The producers’ and retail prices of white bread have considerably increased from 1999 to 2003. In consequence of the rise in wheat price a further considerable increase of ca. HUF 20-25 per kg white bread can be expected in 2004. There is an analogous trend also in flour milling. In the wheat production the manufacturing cost dropped in 2001 in spite of the increase in cost per hectare, because the average yield was much higher than in the previous two years. However, in both 2002 ands 2003 the average yield dropped again, in consequence of which the price of wheat continued to rise. The yield drop in 2003 and its effect on the producers’ final product prices in the wheat-flour-bread product channel has again brought the disproportions between cost and income in this sector to the surface, to which the increase in VAT will further add in 2004. The situation is best in the commerce and worst in the milling industry that is operating at a considerable surplus of capacity; however, the by-products play a great role in the reduction of prices and the obtaining of at least a modest result. Within the database investigated the companies of the baking industry, being considerable bearers of the costs, have continually improved their position and in 2001 even increased their income.
