Renforcement des conditions de production laitiere dans les aoc fromageres dites de plaine : le cas de l'Epoisses

Abstract

The Syndicate de Defense de l'Epoisses' has promoted a reflexion, between local cheese makers and milk producers, on the conditions of milk production in the epoisses supply chain. This work contributed to install new, strong and durable relationships between these partners. The method used on the field to elaborate the new rules of production, was proposed by the 'Institut de l'Elevage'. It was mainly based on a precise analysis, conducted by the farmers, of their daily actions to herd the cattle and to produce the milk. The first results help strengthening the typicality of the cheese of epoisses; more over, the integration of the supply chain in its environment, reinforce the social legitimity of the producers of milk and of cheese. Others cheeses, under Protected Designation of Origine, which presently carry on such reflexions, should take advantage of this experience.
