Couches paysannes et élevage charolais dans le Nivernais

Abstract

This article first outlines the introduction and the production of charolais stock in the Central Nivernais region and then more specifically considers its present evolution in this region. The writer notices that the majority of the farms produce unfattened stock, sold between 18 and 24 months, and then presents the social origin of the farmers and examines the factors that encourage them to adopt this type of production. The long-standing nature of this production system seems to depend mostly on an unegual alliance between two types of producers. Nevertheless the fact that this survey is limited to the farming population alone and does not cover all the economic agents in the meat network, reduces the scope of the conclusions that can be drawn with regard to the future of this production system in this region.
