Arte y cocina: nuevas formas de expresión artística a través de los alimentos

Abstract

La elaboración de un plato con una finalidad nutritiva ha constituido durante siglos un proceso artesanal orientado a satisfacer una necesidad humana. Sin embargo, la relación entre comida y placer y el amplio conocimiento científico de la composición de los alimentos han llevado a buscar nuevas fórmulas de presentación que despierten otros sentidos de manera similar a como puede hacerlo una obra de arte. En el presente trabajo se analiza esta conjunción entre cocina-arte y la presencia de alimentos en la obra artística como objeto de representación y metáfora expresiva de evocación de sensaciones a través de nuevas técnicas expresivas.
